In addition to Citra and Galaxy additions late in the boil, we dry-hopped the beerwith a bit more of Citra and Galaxy. This gives the beer a nice fruity hop nose with notes of grapefruit, tangerine, tropical fruit, and a touch of the herbal/onion notes coming thru on the palate. It finishes dry with a big, lingering hop bitterness, and a bit of alcohol warmth. Pretty easy-drinkin’ for a beer its strength…

Hot Shot is an American IPA brewed with the latter wort runnings of the massive Imperial IPA 1ZENUFF. While the 1ZENUFF is boiling in the kettle of Brewhouse #2 we send the lower gravity runnings to BH#1 kettle where we unleash a tidal wave of Warrior, Crystal, Cascade and Centennial hops to provide this beer with an aggressive bitterness and serious citrus punch! In the fermentation tank we dry hopped this beer with 2 lbs. / bbl. of Cascade, Centennial and Crystal pellets and then moved it into another tank with 3 lbs. / bbl of whole Crystal hops from Hop Head Farms and lightly toasted French Oak chips. The resulting golden ale is very dry with a crisp bitterness and exploding with aromas of freshly grated citrus peel, pine and fresh hop cones with an underlying kiss of vanilla from the toasted French Oak.

This brown ale is brewed in collaboration with our friends at Upland Brewing Co. in Bloomington, IN and Dark Matter Coffee here in Chicago. Brewed with a combination of Pale, Dark Munich, Caramel 77, Chocolate malt and Flaked Oats the resulting beer has a deep brown hue, smooth mouthfeel and layers of complex caramel flavors and a faint hint of baker’s chocolate. We use Magnum and Sorachi Ace hops in the brewhouse to lend a mellow balanced bitterness to this ale. After fermentation, we transfer this beer into another tank that holds bags of whole bean Dark Matter Coffee and allow it to rest on these beans for a week before being packaged! Sitting on the whole beans infuses this beer with deep, rich, roasty aromas that reminds you of being in one of DMC’s coffee shops!

Utilizing Pale Ale malt as the base along with Caramel Malt from Chile, English Roasted Barley, and Dark Chocolate malt, the resulting medium-bodied beer is rich and complex with notes of dark roasted coffee and baker’s chocolate. We used Warrior hops for bittering to contribute a clean crisp bitterness and a blend of Chinook and Cascade for a blast of fresh flowery hop aroma in the whirlpool. After fermentation we hit this brew with a fresh dose of Centennial and Chinook dry hops to infuse this dark ale with fresh aromas of citrus zest and pine. In our series of stouts, this one has the highest level of both hop bitterness and aroma.

This IPA was inspired by our Kolsch Bier, Geistfährt. We used the malt bill of Geistfährt to produce an India Pale Ale that retained much of its extra pale hue. We harvested some of our Kolsch yeast from the Alt Bier, and fermented it a bit warmer, to get more of a fruity complexity, which goes well with the citrus and pineapple notes that we get from the blend of Zythos and Cascade hops.
