Urban Chestnut Brewing Company (UCBC) is an unconventional-minded yet tradition-oriented brewer of craft beer. We are located in St. Louis, MO and were founded by two friends who have collectively been involved in the brewing industry for approximately 40 years. One, Florian Kuplent, is a German-born and educated brewmaster who brings over two decades of international brewing expertise to UCBC. The other, David Wolfe, is a St. Louis native who spent almost two decades employed with St. Louis’ largest brewer in the areas of sales and marketing. We like to call our unique brewing philosophy Beer Divergency —a ‘new world meets old world’ brewing approach wherein UCBC contributes to the ‘revolution’ of craft beer through artisanal creations of modern American beers, and pays ‘reverence’ to the heritage of beer with classically-crafted offerings of timeless, European beer styles.
We have two locations in the city of Saint Louis. Our original location, our Midtown Brewery & Biergarten, is situated in an old 1920′s garage in a district of St. Louis known as Midtown Alley. With its traditional, German biergarten and developing barrel-aging program, we believe our Midtown brewery represents the Reverence side of Beer Divergency. Our second facility, our Grove Brewery & Bierhall (formerly a paper company which was also built in the 1920’s), is located in a neighborhood nicknamed The Grove. We utilize this brewery as a source for the bulk of our beer production and for all of our bottling and distribution. With its large, industrial bierhall and European-inspired cuisine, we like feel our second brewery represents the Revolution side of Beer Divergency. Regardless of which brewery you may visit, either our Midtown Brewery & Biergarten or our Grove Brewery & Bierhall, both are located in areas of Saint Louis with unique histories. Areas that are undergoing revolutions of their own, allowing us to be a part of the vibrant urban culture while remaining grounded by our chestnut roots. Our brewmaster Florian admittedly hasn’t dabbled in ciders too often. So when he described UCBC’s very first cider, Bushelhead, as estery and a little ‘winey’ we weren’t sure if he wasn’t being a bit ‘whiney’ himself. So we’ve declared that besides being a cider, “Bushelhead” is a homonym meaning; ‘winey, ‘strong cider’, or ‘whiney’. Thus our tagline – “Bushelhead - A bushelhead, bushelhead created by bushelhead brewers.”

For the past 30 years, Forest Park Forever has been dedicated to keep St. Louis’ beloved Forest Park as one of America’s greatest urban parks. As a “Prost!” to the organization’s anniversary festivities, Urban Chestnut chose to brew this Pre-Prohibition Style American Pilsner, a style that was popular in the US at the time of the Forest Park’s opening in 1876. And like Forest Park itself, this beer has a fine, noble character and it is accessible to all.

We brewed this Belgian-style Pale Ale to celebrate the tenth anniversary of a local St. Louis farmer’s market and as such, we knew we had to make something unique. To accomplish this (and to honor local farmers) we incorporated a small amount of corn into the grain bill, adding a subtle, sweet smoothness to the spicy hop and yeast character of this Pale Ale, making it truly a Geiles (awesome) Bier!

To recreate a traditional IPA in proper English fashion, we brewed this beer with all English East Kent Golding hops, and all English Maris Otter malt. As such, this IPA is much like British troops would’ve enjoyed in India in the late 1700’s. However, we must admit a shortcoming... we were not able to sail this beer on any of Her (or His at the time) Majesty’s Ships before reaching its final destination.

Hopswitch is part of our Single-Hop Series, which demonstrates how a beer’s flavor and aroma can vary simply by changing hop varieties in an otherwise identical beer. However, the prospect of using two hop varieties instead of one was too good to resist. We found the combination of Mosaic and Citra hops to be a dream pairing, and this slight breach of etiquette creates wonderful notes of citrus, pine and passion fruit, and berries.

That’s a BIG stretch, but Florian’s not naming the beer after himself, others at UCBC are to blame. To help celebrate Ireland’s Patron Saint, UCBC’s patron brewer, “O’Florian”, has brewed a traditional Irish Dry Stout, a style that quite often surprises people with its easy-drinking demeanor despite its ominous aroma and dark appearance.

Not too long ago the beer world lost one of its modern icons, Pierre Celis. Pierre, almost single-handedly, resurrected what is today one of the most popular styles of craft beer…the Belgian Wit - a deliciously refreshing, wheat beer originally created by Belgian farmers in the middle centuries. Today, the style has a generous range-of-flavor and is often infused with a variety of spices, primarily coriander and dried citrus fruits. We affectionately refer to the first beer in our Revolution Series of modern, American craft beer as our unusual little bird.
