Alter Boy is a Belgian Dubbel that is being aged in Bourbon barrels, it will be 7% alc. when finished. It's a very balanced malty beer that uses Belgian Pilsner, Biscuit, Munich, Special B, and Vienna malts, as well as Belgian Candi Sugar in the recipe. The Bourbon barrels will add notes of oak, bourbon, vanilla and caramel that will really complement the the maltiness of the beer. The beer has been aging in the barrels for over a month and has really come together nicely. The beer was the brainchild of Dogfish brewer Wayne Milford. He came up with the idea by trying to find something off-centered that would complement one of his favorite beer styles (Belgian Dubbel). Wayne had some bourbon barrels that he'd picked up a while ago and had never used them so he figured that he'd give them a whirl with this beer. Wayne said, "I thought that by aging the beer in bourbon barrels I would get flavors and aromas that would really hold their own, but also not overpower an already complex style of beer."

This brew-pub exclusive is a strong brown ale brewed with brown sugar, and dark roasty grain. We created it by combining our Indian Brown Ale, Palo Santo Marron, and an experimental batch of 120 Minute IPA brewed at the Rehoboth Beach brewpub by brewer Bryan Selders. The name comes from a Melville story of the same name about a big strong sailor in the British Navy. This three thread ale has a deep brown color, with firm bitterness balanced by complex malt sweetness and roasted notes.

This Ancient Ale proves that beside the wine on every Italian's dinner table, there should also be a place for beer. To develop the recipe for Birra Etrusca Bronze, Dogfish Head's Sam Calagione traveled to Rome with molecular archaeologist Dr. Pat McGovern. With the help of Birreria Brother Brewers Leo DeVencenzo of Birra del Borgo and Teo Musso of Baladin, they analyzed drinking vessels found in 2,800-year-old Etruscan tombs. Although Italian historians were a little reluctant to admit it, the team clearly found that the Etruscans had a taste for ale. "In every part of the process, we go for as much authenticity as we can," Calagione says. "Ingredients are often tough to track down, and there can be financial and logistical challenges, but we really love embracing these risks to bring these beers to market." The backbone of Birra Etrusca comes from two-row malted barley and an heirloom Italian wheat. Specialty ingredients include hazelnut flour, pomegranates, Italian chestnut honey, Delaware wildflower honey and clover honey. A handful of whole-flower hops are added, but the bulk of the bitterness comes from gentian root and the sarsaparilla-like Ethiopian myrrh resin. Birra del Borgo and Baladin also will brew a version of Birra Etrusca, and to add complexity and variety, each brewery will ferment its batches with different traditional materials. Dogfish will use bronze, Baladin will use wood, and Birra del Borgo will use terra cotta.

This Brewpub Exclusive was brewed at the Rehoboth Beach brewery by our Milton-based Quality Assurance Team. Together they came up with the beer idea, recipe and name. Birra Romano is a black saison with French Saison yeast, chocolate and black malt, lemon peel and wheat malt. It was hopped with Southern Cross hops. The name Birra Romano is a nod to the beer's similarity to Caf Romano, espresso with a twist of lemon. In terms of flavor, Birra Romano has some clovey spice and herb notes with notable red apple esters. Most of this is yeast character, as the only thing we added other than hops and malt was lemon peel.Birra Romano, with its thin body, floats beautiful over 90 Minute IPA and Midas Touch (one part Midas to two parts Birra Romano).

Let's travel back in time again for another Dogfish Head Ancient Ale (Midas Touch was our first foray and Theobroma our most recent). Our destination is 9,000 years ago, in Northern China! Preserved pottery jars found in the Neolithic villiage of Jiahu, in Henan province, have revealed that a mixed fermented beverage of rice, honey and fruit was being produced that long ago, right around the same time that barley beer and grape wine were beginning to be made in the Middle East! Fast forward to 2005. Molecular archaeologist Dr. Patrick McGovern of the University of Pennsylvania Museum of Archaeology and Anthropology calls on Dogfish Head to re-create another ancient beverage, and Chateau Jiahu is born. In keeping with historic evidence, Dogfish brewers use orange blossom honey, muscat grape juice, barley malt and hawthorn fruit. The wort is fermented for about a month with sake yeast until the beer is ready for packaging.

Available only at Brewpub. Chicha is the quintessential native corn beer throughout Central and South American. Indigenous versions with local variations exist in Chile, Bolivia, Colombia and many other countries. Dogfish Head Chicha is most closely based upon Peruvian brewing traditions. We've sourced indigenous ingredients to make the most authentic interpretation possible: organic pink Peruvian pepper corns, yellow maize and organic Peruvian purple maize. We also use local (US) strawberries - a traditional chicha ingredient that we chose to source locally as we were worried Peruvian strawberries would spoil in transit. The most exotic and unique component of this project, from the perspective of the American beer drinker, happens before the beer is even brewed. As per tradition, instead of germinating all of the grain to release the starches, the purple maize is milled, moistened in the chicha-makers mouths (which we did right here three weeks ago in our Rehoboth brewery), and formed into small cakes which are flattened and laid out to dry. The natural ptyalin enzymes in the saliva act as a catalyst and break the starches into more accessible fermentable sugars. On brewday the muko, or corn cakes, are added to the mash tun pre-boil along with the other grains. This method might sound strange but it is still used regularly today throughout villages in South and Central America. It is actually quite effective and totally sanitary. Since the grain-chewing (known as salivation) happens before the beer is boiled the beer is sterile and free of the wild yeast and bacteria you would find in modern Belgian Lambics. Dogfish Head Chicha is 6.2% ABV, cloudy and unfiltered. It has a beautiful-purple-pink hue from the Peruvian corn, strawberries, and tree seeds - it's dry, fruity, complex, and refreshing.

Daily Wry was brewed with Maris Otter Malt, a hearty dose of Rye Malt, Crystal Rye and Dark Munich Malt. The grains work together to create a bready, full bodied, almost peppery flavor. Joseph also brewed with a pinch Amber, Coffee and Black Malt adding a toasted pumpernickel bread character. Our Espresso Bock was made with actual Espresso Beans & 5 Malt Varieties. It is a dark brown color with attractive garnet highlights. The bouquet is noticeably coffee-like. The malty-sweet flavor is complimented by the roasty, chocolate notes of the espresso beans and balanced by a medium to full body. Bottom fermented, a Bock beer is named for the famous medieval German brewing town of Einbeck. The style is generally a heavy bodied lager and is darkened by high-colored malts. Bock is traditionally brewed in the winter time for drinking during the Spring.

Back in May of 2006, Sam Calagione visited the Herold Brewery in Prague to brew an adaptation of our Golden Shower - known as Golden Revolution. Golden Revolution is an Imperial Pilsner Sam and Pivovar Herold Bfieznice brewers came up with using traditional Czech brewing techniques, local ingredients, and spring water from Herold's castle grounds to create what is quite possibly the first high alcohol, dry-hopped monster beer from Eastern Europe. Pivovar Herold's Golden Revolution was available in the United States exclusively through Michael Jackson's Rare Beer Club as the November 2006 featured selection.

Being one of the original gangstas of off-centeredness the Gose is one of the only types of beer legally allowed to be brewed without the Reinheitsgetbot restriction in Germany. Gose originated in the Saxon State of Germany in the town of Goslar on the river Gose. The mash consisted of 40% wheat, 40% German Pilsner Malt and 20% Flaked Oats to help round out the character of the beer. For our version, brewer Todd Perkins was in charge - in the kettle we used Vanguard hops, Salt (Hawaiian Sea Salt), ground coriander and lactic acid to finish. Todd gave a nod to a fave flick 'Ghostbusters' in naming this beer.

This is the winning beer from the 2010 "Extreme Homebrew Challenge sponsored by Jose Pistola's, Home Sweet Homebrew, and Dogfish Head" during Philly Beer Week earlier this summer. Homebrewer Kyle Kernozek won the challenge and brewed the beer (along with our own brewers) at the Rehoboth Beach brewpub on August 4th. In addition to hosting the brew, Dogfish will submit the Jormungandrs Revenge for the Pro-Am Competition at the 2010 Great American Beer Fest in Denver, CO this fall. This beer is a Gotslandrika, an older beer style from the Norwegian region. For the brew, a juniper branch with berries is first boiled for ninety minutes - this is the strike water that is used to mash with. At heart, this is a smoked beer but with the juniper branch and berries added, as well as adding honey in the secondary. The Juniper flavor is present throughout the beer with Juniper aroma being prominent.

With the help of biomolecular archaeologist Dr. Patrick McGovern, we've re‐created another Ancient Ale, this time from the Nordic climes of Scandinavia. The recipe for Kvasir was developed with the help of chemical, botanical and pollen evidence taken from a 3,500‐year‐old Danish drinking vessel. The vessel, made of birch bark, was found in the tomb of a leather‐clad woman Dr. Pat says was probably an upper-class dancer or priestess. The analysis pointed to the ingredients used in this unique brew: wheat, lingonberries, cranberries, myrica gale, yarrow, honey and birch syrup. The base of Kvasir is a toasty red winter wheat, and the bog-grown berries deliver a pungent tartness. While a handful of hops is used, the earthy, bitter counterpunch to the sweet honey and birch syrup comes from the herbs.

This Brewpub Exclusive is the brainchild of brewer Jeremy Hunt - it's called Le Kabouter de Guerre which means The Gnome of War. It's sort of an homage to Houblon Chouffe, a Belgian Double IPA. But, while La Chouffe's mascot is a happy little gnome, La Kabouter is an angry one. Big bitterness and big hop flavor. Jeremy dry hopped the beer and says it is a monster! The grain bill is quite simple; A lot of pale 2 row, some Munich and some wheat as well as some Belgian Candy sugar to dry it out. A Belgian yeast strain was used to add some complexity of flavor and some tasty esters and phenolics, but this is a hop bomb for sure. Using Amarillo, Cascade, and Palisade hops, between the first wort hopping, the boil additions and the dry hopping, this little angry elf should clock in at about 92 IBU's and 8.9% alcohol. All in all, it's roughly 3.1 lbs of juicy American hops per Bbl!

The first addition is unfermented juice, known as must, from viognier grapes that have been infected with a benevolent fungus called botrytis. This noble rot reduces the water content in the grapes while magnifying their sweetness and complexity. The second is pinot gris must intensified by a process called dropping fruit, where large clusters of grapes are clipped to amplify the quality of those left behind. "This is the absolute closest to equal meshing of the wine world and the beer world thats ever been done commercially," says Dogfish's Sam Calagione. Noble Rot is brewed with pils and wheat malts and fermented with a distinct Belgian yeast strain. It has a spicy white wine body and a dry, tart finish.

An Imperial sorta-porter fermented with Brazilian Rapadura sugar and a couple of really unique New Zealand ingredients. We collaborated on this beer with our friend Luke of Epic Brewing in Auckland, NZ. To make the Portamarillo we first grilled tamarillos (sweet, fruity NZ tomatoes) over Pohutakawa wood at our pub then pureed and added them to the boil. Luke sourced this unique wood for us from his motherland - Pohutakawa has found an important place in New Zealand's culture, both of the European settlers and Maori - being venerated for spirituality, strength and beauty. The wood and tamarillos do truly add a smoky, fruity, roasty beauty to this beer.

Sam and Dan the Automator of Deltron 3030 teamed up to create Positive Contact, based on Dan's favorite ingredients and Dogfish Head's innovative brewing practices. Named after a key track on the first album, Positive Contact is a 9% ABV hybrid of beer and cider brewed with wood-pressed Fuji apples, roasted farro, a handful of cayenne peppers and a late dose of fresh cilantro. This sweet-and-sour Belgian-ish brew is a light straw color with fruity, cider-like notes. The cayenne and alcohol give it a warming finish. For the inaugural release (2012), the beer was packaged in a dynamic box set of six 750-ml champagne bottles, with a 10-inch vinyl EP of four new Deltron 3030 remixes created exclusively for this project, and a list of Deltron 3030-inspired recipes from a small group of renowned chefs. Subsequent releases did not include the vinyl or recipes.

A modern update on a 9th century Finnish proto-beer. Brewed with rye, we caramelize the wort with white hot river rocks, then ferment it with a German Weizen yeast. This beer is collaboration between Dogfish Head, Stone Brewing Co., and Victory Brewing Company. The idea for this beer germinated way back in 2003 when the three guys (Sam from Dogfish, Greg from Stone and Bill from Victory) formed the BUFF alliance (Brewers United for Freedom of Flavor) - a noble endeavor with the goal to highlight the passion and camaraderie of the American craft brew movement. So, BUFF didn't really do anything (beyond talk a lot of talk) until 2010 when the three brewers finally got together to jointly brew at beer at the Stone Brewery. Saison du BUFF will first be brewed at Stone and then replicated at each of the other two breweries - same recipe, same ingredients, three different breweries throughout 2010. Plans call for Saison du BUFF to be a 6% alc/vol Saison brewed with parsley, sage, rosemary and thyme. This beer will be brewed three times, once at each brewery using the same recipe.

Surrender Monkey is a Scottish-style Ale brewed by our brewer Brian Connery. The beer is brewed with four traditional Gruit spices; yarrow, mugwort, meadowsweet and chamomile. The spices are steeped separately and the tea is then added to the beer pre-fermentation. Surrender Monkey is malty with a flowery nose displaying hints of honey and green apple. Brian fermented the beer with our proprietary Dogfish yeast. He chose this style to give a shout-out to his own Scottish heritage and named the beer in honor of Groundskeeper Willie of "The Simpsons".

Theobroma is a celebration of chocolate, the food of the gods. This Ancient Ale is based on chemical analysis of pottery fragments found in Honduras that revealed the earliest known alcoholic chocolate drink used by early civilizations to toast special occasions. The discovery of this beverage pushed back the earliest use of cocoa for human consumption more than 500 years to 1,200 B.C. As per the analysis, Dogfish Head's Theobroma (translated into "food of the gods") is brewed with Aztec cocoa powder and cocoa nibs (from our friends at Askinosie Chocolate), honey, chilies and annatto (fragrant tree seeds). It's light in color, not what you expect from your typical chocolate beer (not that you'd be surprised that we'd do something unexpected with this beer!). This beer is part of our Ancient Ales series -- along with Midas Touch, Chateau Jiahu, Sah'tea and Ta Henket -- so step back in time and enjoy some Theobroma.

Tweason?ale is a beer we brewed on the cusp of summer. It is a gluten-free sorghum based beer brewed with fresh strawberries from our friends at Fifer Orchards near Dover, Delaware. For the sorghum, we sourced a dark, sweet, syrup with notes of molasses and pit-fruit. We also used a a dark buckwheat honey with a beautiful hay-like, earthy-malty thing that we felt added the final touch to this Tweason?ale recipe.

The idea actually was born of beers already being produced in Southeast Asia, namely Myanmar (formerly Burma) and Thailand. The main type of beer made in that area of the world is akin to the Dortmunder/Export type lagers of Germany. Both Myanmar and Thailand have breweries producing a beer which is their regular production lager with spirulina added. Hence, Verdi Verdi Good was born. Verdi Verdi Good holds true to the Dortmunder style and gains a delightful green and a subtle organic aroma from the addition of spirulina. Spirulina is a blue green algae prized for its high nutritional protein content.

Wet Hop American Summer is our 2009 fresh hop beer. We used 40 pounds of fresh CTZ hops flown in from Moxee, Washington. The hops were used in one addition at the end of the boil. Should be about 35 IBU. Grains for the beer included Pilsener malt, flaked maize, Munich malt, and CaraPils.

Wrath of Pecant is a collaboration between Dogfish and the Alstrom Brothers of Beer Advocate celebrating the 2010 Extreme Beer Fest. So in the end... Wrath of Pecant became a 6% abv brownish ale brewed with pecan-wood smoked malt, plantains, and carob. It is complex yet quaffable; maltiness nuttiness and subtle earthy notes prevail. The beer was first tapped at the 2010 Extreme Beer Fest in Boston in February. The bottles (750ml) were released from the Milton brewery for The Weekend Of Compelling Ales & Whatnot in March of 2010. They are now available for sale from the brewery and should be around into the summer. There are no plans to distribute this beer outside the state of Delaware.

This Brewpub Exclusive saison is an interesting paradox; refreshing yet flavorful, light but complex. The Saison yeast strain takes center stage and contributes complex aromas of pineapple, mango, papaya, and pepper. A healthy dose of American hops at the end of the boil compliments the tropical fruit aromas with their own notes of citrus rinds and fruit. Farmers in Belgium and France used to make beers to quench their workers after a long day in the fields and each beer reflected the personality and tastes of the individual brewer as well as the region in which it was brewed. Here we have our version of a Farmhouse Ale which combines our love of American hops with respect for the Belgian brewing tradition.
