A Honey of a Saison is a swarm of flavor and a stinger at 11.5% ABV. The French Saison yeast produces big, estery, phenolic aromas and flavors, while the Wildflower Honey lends a spicy, sweet aroma with essence of dried fruits. Champagne Yeast is also used to complete fermentation and create a dry finish. A strong malt bill imparts a rich, golden honey color to the ale, and it shows low hop bitterness at 25 IBU’s.

Flashback Anniversary Ale is an India Brown Ale with 6.8% ABV. This is the first beer we?ve made here that uses one single hop variety (Cascade) in the recipe in five separate additions. The fresh Cascade hop aroma and flavor is perfectly balanced with the dark roasted grains, making Flashback a very unique beer. We?re calling it an India Brown Ale to help illustrate its flavor to the consumer. It?s hoppy like an IPA but dark and roasty like a Brown Ale. Put them together and voila! Flashback at its finest!

Our 2014 hop harvest special release, fRYEd Fresh-Hopped Rye Pale Ale, will be fresh-hopped* with Chinooks from the Still Wind Hop Farm on Colorado’s Western Slope imparting tropical fruit notes to its flavor and aroma. Generous amounts of toasted rye add complexity with a spicy, nutty flavor. *Brewing with fresh off the bine (not vine!) wet hops! This provides a unique hop experience with a more complete hop flavor and aroma due to the presence of volatile oils that are normally evaporated out during the drying process. These fresh hop flowers must be used within 24 hours of harvest!

Rockies uses a combination of two-row pale and Baird's crystal malts to produce this medium-bodied red ale. Nugget hops are added at the beginning of the 90 minute boil primarily their bittering contribution, while Willamette hops are added in the middle of the boil for both bitterness and aroma. David uses Cascade hops in the whirlpool to give Igloo its subtle, hoppy nose. He uses a proprietary yeast strain and won't divulge what secret spices are used during the boil to give this red ale its Christmas zing!

Irish Blessing is a dark Stout brewed with an abundance of black and chocolate malts for a bittersweet chocolate finish. We collaborated with our friends and local roasters at OZO Coffee in Boulder to determine the perfect roast to complement our stout, choosing their OZO Blend to use in the brew adding earthy, roasted coffee flavors to the beer. We then age Irish Blessing on Jameson Irish Whiskey soaked in oak, imparting the finishing touches of whiskey and wood.
