No bells, no whistles, just our best take on the Belgian Quadrupel style. Brewed with nothing but water, malt, yeast, hops and a bit of Belgian dark candi sugar, this beer may not be as out-of-the-box as some of our past winter brews, but it’s just as tasty. Hard to believe that we've brewed 1,000+ batches of beer and for those who have been with us throughout the years, probably surprising to see that the winner is a hoppy ale! A cascadian, dark rye ale to be exact. Brian Pramov and Bryan Keas, a pair of homebrewers from Denver put together this winning recipe for us and it shined brightly in our competition. The roast of the dark malts, the spice of the rye and the intense hop character combine for a fantastic experience.

A rare and secret blend of several different barrel aged beers that we've pulled from our cellar along with toasted coconut and cacao nibs from San Francisco's TCHO. The inspiration for this beer were the unique flavors of a chocolate dipped coconut macaroon. After polishing off a few of those dense, sweet and delicious, coconut treats, Patrick started thinking through the flavor profiles of some of our favorite barrel aged beers, deciphering a way to replicate the luscious qualities of that favorite treat. Spice, rich toffee, cocoa and tropical notes blend deliciously and delicately in this newest barrel aged addition to our collection.

Confession is a true collaborative effort between the wine and beer world. A variation of our sour blonde ale, brewed in part by Fess Parker Winery, was blended and fermented with juice pressed from Parker's Riesling grapes, harvested in part by The Bruery team. The result is remarkable. Not quite beer, not quite wine. Fragrant fruit flavors warm the nose, infiltrated by a slight funk from the wild yeast. The first sip is reminiscent of a dry, white wine, but everything changes upon further examination as the flavors marinate and reveal themselves with each gulp.

While in Belgium, our Brewery Director, Tyler, fell in love with an intensely fruit forward beer at Duvel which was served over ice. This beer drank more like a fruit soda than a fruited sour and was insanely refreshing and easy drinking. We also use rice, a typically despised ingredient in beer, to lighten the body and make it more true to the American lager style.

HUMULUS TERREUX humulus_terreux Humulus Terreux is the type of beer that gets our stomachs tied up in knots of excitement. It’s a chance for us to experiment with both hops and yeast, creating unique, juicy & funky flavors with just these seemingly simple, earthen ingredients. Each batch of Humulus Terreux will use a different hop varietal and one of the several strains of Brettanomyces yeasts that we have incubating in our laboratory to create a one of a kind, wildly traditional bière™. The flavor possibilities are endless when combining possible hop notes of citrus, pine, flowers or grass with the barnyard funk, earth and tropics that can come from a 100% Brettanomyces fermentation. While each beer will showcase a different, distinct character, the overall result will always be dry, funky and delightfully hoppy. FOOD PAIRING Each batch of Humulus Terreux will taste a bit different, but given its basic nature, it should always be great with a home grown salad and simply grilled proteins of all sorts.

We have always loved the idea of brewing with fresh hops -- something about the rawness and cool factor of using hops that were just picked off the vine and then magically -- that's how we roll around here! -- appearing in our kettles is pretty awesome. In the past, we’ve indulged in wet hop season by brewing our ‘wet’ hopped pale Humulus Wet. This year we decided to change things up and brew five different variations of that brew, each with a single hop variant used for the brewing process. The result is five different brews that showcase the best of what hops can offer. We currently have Citra, Centennial, Chinook, Mosaic and Simcoe varieties available.

Ichigo Highway is a collaborative beer that we created with Hangar 24 Brewing from Redlands, CA. The base style is a sessionable sour red ale that we aged in oak barrels along with a whopping amount of strawberries, most of which were picked from the fields besides Hangar 24's brewery. Aged for approximately 8 months, this beer has developed a pleasant funk and a delightful acidity that is balanced by the intensely sweet aroma and flavor of the strawberries as well as a unique dryness achieved by using a sake yeast along with our house strain along with souring bacteria.

L’deracola is a beer inspired by another favorite drink of ours that probably shouldn’t be such a favorite… cola! To create this unique beer we had to dive through the overwhelming layer of saccharine that dominates the flavor of most colas and discover the subtle flavors that create the world’s most popular soft drink. Around a dozen different spices were added to a dark malt base and it was finished off with a twist of lime for good measure. The resulting beer has all of the flavors of an ice cold cola, without the overwhelming sweetness.

For our first local collaboration beer of 2012, we teamed up with our good friends at Beachwood Brewing in Long Beach, CA. We've worked with these folks on a number of small batch brews, beer dinners and general shenanigans for many years and it was really exciting to sit down and work on a full scale project with them for the first time. What we ended up with is an imperial smoked stout, but of course it wasn't that simple. We smoked our own malt on the same smoker and with the same blend of three different woods that Beachwood uses for their award winning BBQ - apple, white oak and pecan. We then aged the beer on those same three types of wood. The resulting stout is hearty and wonderful, balancing the rich, meaty smokiness with the sweetness of the malt. This version has been aged in Rum barrels with coconut and is purely delicious! ***RESERVE SOCIETY ONLY***

“Tout Mais Le Coller” loosely translates to “everything but the stick,” and that is what we went for in this beer that is meant to clone the flavors of an orange cream popcicle. We brewed this cream ale with our friends from Noble Ale Works, adding a confident dosing of both lactose and natural orange flavor, creating a beverage that will remind you of your youth. A sweet and creamy mouthfeel with that unforgetable bittersweet bite of an orange, peel and all. This beer is far from subtle in flavor and is a very fun one to share with friends.

Evan Kleiman, host of KCRW's Good Food, was inspired to collaborate with Patrick Rue and The Bruery after enjoying a homemade Rhubarb Raspberry Pie. The rhubarb's fruity sourness tempered with the sweetness of the fresh raspberries and the wheat crust, begged to be bottled up in the form of a bubbly beer. Keeping the original pie recipe in mind, specialty grains were chosen to mimic the crust, and rhubarb and raspberries were used in varying stages of the brewing and fermentation process. The resulting beer is reminiscent of a fresh country pie, cooling on a farmhouse windowsill.
