To kick off 2015, Breakside & Fat Head’s Breweries have brewed a draft-only collaboration, “Juggling Plums”, A Gose (slightly sour wheat beer traditionally made with salt and coriander). In a non-traditional twist, they derived all of the salt from an unlikely source: the Japanese salt plum or “Umeboshi”. Umeboshi are small Japanese plums that have been cured with Red Shiso (an Asian culinary herb, belonging to the mint family) and salt and spend a year fermenting in wooden barrels. The result is a fruit that is intensely briny with a light sweetness and herbaceous quality.

This is a draft-only IPA inspired by the dry, dank hoppy beers of Southern California. Originally designed for the 2015 Saraveza Double IPA Fest, Mic Drop is a tribute to some of the OG IPAs of the West Coast. It is bright golden in color, aggressive in hop flavor, and higher in alcohol than most "single" IPAs. Hop-wise this beer stays true to the San Diego-style and leans heavily on Simcoe and Amarillo to drive the flavor. They provide notes of grapefruit, candied orange, and strong pine. A dose of Centennial gives the beer some "old school" notes, and we use a heavy hit of Citra late in the boil and in the dry hop to kiss the beer with a bit of newfangled, tropical hop flavor.

Once a year, we release this hoppy behemoth that used over 9 pounds of hops per barrel of beer, got two separate dry hop additions, and clocks in at over 11% alcohol. You need to have a deeply masochistic streak to desire this much hoppiness in your beer. It is a tongue-scraping, aggressive beer with more punch than anything else we make. Safe Word will push you to the limit of how much hop and beer you can handle, but we think you’ll like it enough to keep coming back. The tropical, grapefruit and dank notes of some of our favorite hops make this a pleasure that is hard to refuse. Just know when to say stop.

Our brewers draw inspiration for beers from all corners of the world of food and drink. And this beer is a perfect example. Influenced by a dish at Johanna Ware's restaurant Smallwares in Portland, OR, tow of our brewers designed a beer using Lychee and Peruvian Yellow Chilies. The playful intermingling of moderate spice and unctuous, tropical fruit keeps this beer in balance. Early aromas of pepper give way to a rich and fruity mid palate that is followed by a pleasant, lingering heat. The use of several "hot" hops with distinctive tropical aromas add additional depth of flavor to this unique beer.
