To kick off 2015, Breakside & Fat Head’s Breweries have brewed a draft-only collaboration, “Juggling Plums”, A Gose (slightly sour wheat beer traditionally made with salt and coriander). In a non-traditional twist, they derived all of the salt from an unlikely source: the Japanese salt plum or “Umeboshi”. Umeboshi are small Japanese plums that have been cured with Red Shiso (an Asian culinary herb, belonging to the mint family) and salt and spend a year fermenting in wooden barrels. The result is a fruit that is intensely briny with a light sweetness and herbaceous quality.
