Three months ago we brewed Coastal Evacuation the same way we always do right up to the point where fermentation ends. Normally we ferment, dry hop, condition and package the beer in three weeks time, but for this batch we spiked it with Brett. Allowing a second Brett'd fermentation take it's time to develop, we're left with a more rustic and earthy profile, expressing a more funky finish. A fresh dry hop after the Brett had adequate time to express itself leaves an aromatic and intriguing brew.
