Nothing stirs our loins like finding the best way to include a new experimental hop in our beers. This hazy IPA was brewed with experimental hop HBC 735 on both the hot side and in the dry hop, which according to our friends at Yakima Chief Ranches is a "ginormous yielder". ;) This hop is particularly high in grapefruity, passionfruit-like 3MH (3-Mercaptohexan-1-ol), which is extracted on the hot side and can be biotransformed by brewer's yeast into riper 3MHA (3-mercaptohexyl acetate), which is reminiscent of passionfruit and guava.
