Omega Midnight Stout is a collaboration with Omega Yeast Labs in Chicago. We worked with them to create a proprietary blend of yeasts that worked together to create a sweet fruity stout with a dry finish. A big, dark slightly smoky beer whose sweetness and strength have been amplified after 6 months in a Tailwinds Rum barrel.
