We made a special batch of Ode To Mercy aged on bourbon oak for these chilly winter days. It’s not a very big batch so it only got out to a few places (some of which may have already run out) – but if you’re looking for what we’d describe as an amped up version of Ode. a seasonal Atlanta favorite over the past few years. The Avondale Estates, Georgia based brewery will bring the beer back to taps in a few weeks. Brewmaster Eric Johnson took Ode To Mercy, and added bourbon soaked oak chips. The result is a winter beer with oak, vanilla, coffee, with a semi sweet finish.

Built on the backbone of a classic English Barleywine with the addition of dried Prussian lemons, tart cherries, and cranberries. Dark fruit abounds with roasted goodness in each sip. Hints of melon and tropical notes on the nose. Long lingering finish that is rich yet not cloying that is reminiscent of fresh baked bread, bright citrus, and mellow pit fruit. Bold and complex at 12% with new layers emerging as your goblet warms.

Who says lighter beers have to be boring? Let There Be Light is Wild Heaven’s first “sessionable” beer, coming in at only 4.7%, yet FULL of flavor. Starting with both barley and wheat, we added a variety of unusually flavorful hops to create a surprisingly complex beer full of notes of orange, lemon and especially grapefruit that may just change the way you think about “light” beer.
