Rose was brewed for spring and is composed of roughly half freshly brewed saison and half barrel aged Four with cherry and raspberry. The young component included rice in the mash for extra lightness and a decent dose of hops to give it an edge on the finish which balances the fruit from the aged portion. Fresh rose petals were added post fermentation to provide floral and botanical notes, while the light bitterness on the finish pushes the Rose in a historic saison profile.

Saison Ørsted is a uniquely blended saison of 70% freshly brewed beer and 30% barrel aged beer. The fresh portion is made entirely with two strains of brettanomyces (no standard brewer's yeast) while the older component is Saison du Blodget (barrel aged Five in former Fantasia casks) maturing since September. The beer shows a variety of brettanomyces aromas and flavors, but they're kept in check and balanced by a bit of warm malt character, light fruit and hop notes, and a satisfying mouthfeel.

Six is a dark rye saison with layered malts, pleasant stone and mineral notes, and a dry finish.

Collaboration with Jason McAdam. A distinctly full-bodied and creamy stout with a touch of brine on the finish. The "base" beer is a strong (medium strength by most standards, 16.6 plato) stout. We used chocolate wheat instead of the usual barley version along with a pinch of rolled rye. In the end we decided to add roughly ten gallons of oyster "liquor" that Jason picked up fresh from the coast off a train. We didn’t want to brew an oyster stout without any oyster meat though so we also picked up eight dozen DeCourcy oysters from B.C. and cooked them during the kettle boil. After eating all the wort-soaked meat we cleaned and saved the shells to add later to the beer, post fermentation, like dryhopping.
