Apple Core Gose is a classic German style Gose infused with a bit of Central Coast. We start by brewing a Wheat Beer that is kettle soured with locally sourced Cider Apples freshly pressed from See Canyon. After the kettle souring is complete, the Gose is pumped back into the brew house where the boiling process occurs. During the 60 minute boil, locally sourced sea salt derived from Avila Beach, the home of Diablo Nuclear Power Plant, is added. The result is a delight to the taste buds with a nice tart twang and flavors of a full bodied apple cider that finishes dry.

We fermented this whack job of a beer at a slightly higher temperature to lend the warmth and mouthfeel of a Hot Toddy. Continuum is a traditional German-Style 12˚Plato Pilsner brewed using traditional ingredients. Starting with a blank water profile, we were able to emulate a soft continental European water character. This helps to accentuate a soft and round hop character while reducing perceived bitterness of the German tradition and Czech Saaz Hops. To add more backbone to the malt character, we run a 3-hour boil (Maillard Reaction) to caramelize and accentuate the German Pilsner malt which has a round and slightly bready mouth feel compared to US 2-row barley commonly found in most ale. Our Full Blown Stout gives off a robust aroma of roasted barley, accompanied by a touch of dark brown sugar and just a hint of smoke. The texture of this stout is velvety and well-rounded, with just the slightest acidity to introduce the rich flavor of the roasted malt and caramel characters that show off the compilation of roasted barley, chocolate malt, and crystal malts along with its dark black color; magnum and willamette hops have been added for slightly perceivable hop bitterness.
