The mighty Apollo is the product of traditional ingredients, brewing methods and training. The recipe is classic—barley malt split with a generous amount of wheat, and light use of German Hersbrucker hops. Ripe notes of banana, vanilla, and clove define the flavor profile that is also traditional for the style. Procedure, however, is what separates a good Bavarian wheat beer from a great one. That’s where Sixpoint’s Brewmaster, the Weihenstephan-trained Jan Matysiak comes in. Under his guidance, Apollo’s fermentation takes place in horizontal, pressureless tanks, the closest one can get to traditional open tanks while still offering microbial protection. Jan oversees the meticulous process, precisely crafting this exemplary German ale. Jan and Sixpoint founder Shane traveled to Bavaria last year in search of the ultimate summer beer. With Apollo, Jan seems to have created it.

Every year, the main-hops featured in the Autumnation Ale is chosen by Sixpoint fans, so no two years are quite the same. This year's hops is Mosaic, a new strain with huge potential. Copper in color, the Autumnation Ale clocks in at 6.7 %abv. The initial assertive but pleasant 74 IBU-bitterness is carried by a well-balanced malt backbone, accompanied by citrus, berry-like and pine flavors. The massive aroma of fresh hops features citrus, strawberry, stonefruit, berry and piney notes.

Sixpoint Bengali Tiger is reminiscent of the century-old English IPA. In my perspective, many current IPAs suffer from lacking substance; unbalanced by a hoppy assertiveness that is not substantiated by a strong foundation of rich malt flavors. Our interpretation uses the highest-quality, floor-malted base malt, which lends a full-bodied and rich caramel flavor. We mash at high temperatures and add generous amounts of specialty malts to further emphasize a strong foundation of malt as leverage for our generous additions of hops… Which are indeed generous. We use a total of three different hop strains, and add a total of six different additions throughout the process. The Bengali Tiger has a hoppy snap upfront, but strides at a steady pace, and finishes balanced.

For our very limited release Imperial Otis, we souped up our oatmeal stout recipe and aged it in Willet Bourbon barrels for four months. We then blended it with a small amount of un-oaked Imperial Otis to find balance. It pours black with an extra-dark brown head and is 10.3% ABV. full roast malt flavor, delightful oat creaminess, and notes of coconut and vanilla from the aging process. With all the dark chocolate and coconut notes, we think it smells a bit like a delicious chocolate macaroon.

The Brunswick Mum was a German ale brewed at a high gravity for export. For the Mad Scientist Series #18, we brewed a thick German ale with the same spirit. Between a four hour boil, beans and oats in the mash, fresh spruce tips, and ancient spicing, the Sixpoint Mumme certainly resembles its Braunschweig predecessor. Our beer has juniper and cardamom on the nose, laid atop a strong amber ale. Beans and oats, along with the long boil, contribute a full, smooth mouthfeel.

Scottish-style porter brewed with seaweed. Very dark brown, close to black, with tinges of red. Briny salinity mixed with a bit of toastiness and hints of chocolate. Not as heavy tasting as it looks, but it lingers. Chocolate, complimented by a definite saltiness, almost like a salted chocolate. A bit of earthy/umani flavors as well.

This style is the oldest known continuously brewed style in the world, dating back at least a thousand years. Sahti barrels were found on sunken Viking ships dating to the 9th century. In keeping with tradition, we went with old school yeast, employing a Belgian Lambic strain that may have been much like what was floating around in the 1500s when Sahti was spontaneously fermented. We used rye in the mash, as in ancient times, adding body and earthy notes, and juniper berries in the mash for bittering, instead of any late addition hops to recreate the flavor profile of this ancient ale. The result is a mix of sour and sweet, with a big, extra-full golden body.
