From humble beginnings came true enlightenment for this leading San Diego-based brewery. Mike and Lisa Hinkley established Green Flash in 2002. To make the 12th Anniversary American Sour Pale – the Wort is soured in the kettle with Lactobacillus and then boiled with Mosaic, Nugget, and El Dorado hops. After fermentation with California Ale Yeast the beer is then dry hopped with the same three hops selected for fruity complexity. The result is a mild sweetness with prominently quenching lemony tartness and a uniquely complex fruity aroma.

The Treasure Chest 2014 beer is a Barrel-aged Belgian Style Saison with Plum. This specialty beer is fermented in red wine barrels with house Brettanomyces, then conditioned with plums for six months. This enticing blend emerges with an appropriately pink hue, delicate notes of plum and almond, and is balanced by subtle tannins drawn from the barrel and wild yeast. A mouthwatering and tart rose-like finish rounds out Treasure Chest 2014, an exceptional barrel-aged offering.

Offering balance to offset the bold citrus notes, prickly pear juice imparts a peppery-sweet kick in the finish. While developing the recipe for our White IPA, we lined up malted wheat and more than a dozen hop varieties to select the three hops with the most citrus character: Simcoe, Amarillo and El Dorado. A citrus hop explosion leaps from the glass with big tangerine aromas up front, while hop flavors of bitter orange zest dominate and linger to the finish.
