This is our first really strong ale brewed and the beginning of our entry into the Barleywine festivals such as is held at the Toronado pub in San Francisco annually every end of February. It was also our 500th batch of beer brew so we figured we were due to brew a strong beer like this by now.

Kolsch is a unique local top fermented style of Cologne-Bonn metropolitan area where it is produced by about a dozen breweries. Distinctively pale, golden color. Alcohol content by volume under 4.5%.

Over 100 International Bitterness Units and a starting gravity of 1.074. This beer uses over 60 pounds of hops in a brew size of 400 gallons. 36 pounds alone in the dry hop stage. That's a lot of hops! Hops are: Tomahawk, Centennial, Cascade, Amarillo and Simcoe.

We take our Poppy Jasper Amber and spike a finished keg with an extra pound of hops. For example Extra Hoppy Poppy Amarillo has an extra pound of Amarillo hops added to the keg to dry hop in it. This adds a boost of hops flavor. Since each different variety of hops has its own flavor the type of hops added will vary the flavor of the base Poppy Japser accordingly. If you are into hops, this method of hop spiking a keg will allow you to better understand the characteristics of that particular hop. Its and educational thing we do on our part for you. Plus the flavors added this way are really nice (as Borat would say).

It is named after the owners daughter, who is a little honey blonde. She begged to have a beer named after her since her sister, Amber, had one for so many years.

This special beer was created to celebrate the 100th Anniversary of the founding of the City of Morgan Hill on November 10, 1906. It was brewed in the California Common style commonly brewed 100 years ago. We used the San Francisco Lager yeast and Cascade and Centennial varietal hops.

Named after a precious for of quartz indigenous to only Morgan Hill, California, this classic dark ale is smooth and refreshing. Its dark color results from the use of caramel, higher kilned dark crystal and chocolate malt. The beer's flavor is malty and fruity with a subtle roastiness. To finish Poppy Jasper is generously hopped with Galena, Cascade and Liberty hops for a perfectly balanced wonderfully complex character.

We took some of our El Toro Negro Oatmeal Stout above and aged it in an oak barrel that previously contained Old Fitgerald whiskey. It aged in the barrel for 7 months prior to kegging it. The aging gives the beer a subtle but distinctive complex whiskey flavor and aroma.

This beer is named after the Brewmaster's father-in-law. It was formulated to make Bill's mainstream pallet happy. Brewed with 50% wheat malt and lightly hopped William Jones Wheat Beer is smooth, light, crisp and refreshing. It is filtered for a clear honey colored pleasing appearance. Its carbonation level is moderately high for the mainstream appeal yet remains quite flavorful.

Brewed in celebration of our tenth anniversary of business. The inaugural first batch brewed was on March 21, 1994. X was brewed using ten different varieties of hops plus one other for good luck and has an a.b.v. of 10%. The style it was brewed is a strong double IPA which is Geno's favorite style to brew.

Yo Winter Brew is our Winter warmer. Yo is short for the nickname given to the Aztec God Xipe Totec. His nickname was Yohuallahunatzin relating to his proclivity toward Aztec beer consumption. He was also called Yoalli Tlauana meaning night drinker. The brewers of Yo could easily have this nickname too.
