We bring you our American interpretation of the Saison style: Arcadiana. Bibo (pronounced bēbō) is a true pilsner with ingredients from five different countries that has a pronounced continental hop flavor and aroma in an incredibly well-balanced package. We use an enormous amount of the classic Czech Saaz and a touch of Motueka hops from New Zealand to put a new world twist on this beautiful old world style. Motueka offers a subtle pineapple note that underlies a harmony of the traditional black pepper, herbal, and cracker grain character pilsners are famous for. Bibo is dry, quenching, and frankly amazingly delicious.

BRETTOMATIC HOPPY BRETT PALE ALE Brettomatic is a Hoppy Brett Pale Ale fermented 100% with Creature Comforts’ house blend of Brettanomyces that will be available in 750ml bottles. This particular batch of Brettomatic is brewed with Citra hops and is 6% ABV. The flavor and aroma include tropical fruits – kiwi, pineapple, melon, mango, papaya – along with some funk and subtle dry pepper. In the future, the desire is for this beer to become an annual offering that will feature a rotating hop or hop group for each batch. 6.0% ABV.

Cosmik Debris is a vibrant, light in color, Double IPA with a relatively dry flavor and assertive hop aroma. Intense aromas of pineapple, melon, and lime zest, lead to a soft palate featuring a carefully struck balance between firm bitterness and malt. The beer is brewed using Simcoe, Amarillo, Citra and Columbus hops, which gives it its strong fruity smell and soft, balanced taste.

Farmhouse ales are a wonderful umbrella of beers steeped rich in tradition and made by hard workers in the present day province of Hainaut, Belgium. Under this umbrella you will find the saison, biere de garde, as well as the lesser-known grisette. We drew inspiration from the Belgians for our latest limited release bottle, DaySpring, to create our interpretation of a grisette. “as the landscape of hainaut province began to shift from an agricultural to a coal and stone mining region in the late 1800’s, local brewers began to market a beer to the growing population of miners. as saison was considered the drink of farm workers, grisette was the brew of the miners. the origins of the name are sketchy (gris means gray in french). grisette is commonly said to refer to young women who worked in factories and wore a distinctive gray frock as a uniform. as one story goes, these young women, grisettes, would hold trays of ale to refresh the workers as the exited the mines. the term has also been attributed to the color of the prophyritic stone mined in the area of northern hainaut province.” — Farmhouse Ales by Phil Markowski Keeping the farmhouse spirit alive we went to our friends at DaySpring Farms in Danielsville, GA. We sourced local wheat from their fields to showcase in this beer with a blend of traditional yeasts from Belgium. This is the first beer in our Locally Grown series. We hope to continue working with farmers in the local area surrounding our brewery to source ingredients that make our beers truly unique, showcasing our local landscape of flavor and agriculture. So how does a grisette differ from a saison? Our interpretation was that saisons had a bit of lactic quality, where as the grisette is an earthy beer with some hop character. For us, DaySpring is all about showcasing the wheat and yeasts. With a blend of Saccharomyces and Brettanomyces the beer is extremely dry, has a bit of a blue cheese note on the nose, and a lovely body with a soft wheat character that finishes clean. This beer is 4.8% alcohol by volume and is a beautiful compliment to the dinner table. We hope you enjoy a beer we are truly proud of. From the farm to the brewery to you, enjoy DaySpring.

ATHENA DRY HOPPED W/ GALAXY We tell everyone to crave curiosity, well here's us being curious. We took everyone's favorite berliner and added a cool twist by dry hopping with Galaxy hops for a limited batch. Galaxy hops are an extraordinary Australian varietal that have a bright, juicy, fruit flavor they add to the beer. You may be a little familiar with this hop because we use it as one of the hops in Tropicalia, but this is Galaxy all by itself. This version of Athena is a little tart, a little juicy, a little hoppy... it makes Athena a totally different beer that we really like. DRAFT ONLY. 4.5%ABV.

When the leaves change color and the days start to cool down, as if natural instinct, people tend to like drinking darker beer. This isn't the case for everyone or an all the time mandate, we can drink Athena everyday, but something about the cool fall breeze changes the beer drinking palate. This is why we introduce to you our milk porter, Koko Buni. Koko Buni is a lovely milk porter that we've brewed and aged on toasted coconut, cocoa nibs from Athens' own Condor Chocolates, and coffee from our friends at 1000 faces. The name actually comes from the raw ingredients we use in the beer. Koko means coconut in Papiamento, a common language in parts of the Carribean, while Buni means coffee in Swahili, a common language in southeastern Africa. The flavors of this beer are rich and velvety like a warm camp fire, which also is the perfect setting to share with your friends. Mentally take a journey there or to whatever is your perfect autumn evening while enjoying Koko Buni. DRAFT ONLY. SEASONAL.

RYE AMBER AGED ON FRENCH OAK WITH ETHIOPIAN COFFEE A well balanced blend of our Reclaimed Rye with Misty Valley, a direct trade organic Ethiopian coffee provided by 1000faces of Athens, GA. Our balanced approach to blending allows the rye malt and French oak of our Reclaimed Rye to maintain it's well-rounded body and delicate undertones of toasted bread, spice, and subtle vanilla while successfully intermingling with the blueberry and subtle chocolate notes of the coffee. This has been a favorite in our brew lab with tour patrons and as a result we have decided to make a full batch, which should be hitting the market in the coming weeks, check in at your favorite craft beer bar to learn more!

If you guys remember back to our Southerly Love Brewfest we had this summer, you'll remember we threw the party to commemorate our collaboration with 7venth Sun Brewery from Dunedin, Florida. This is one of our favorite beers we've made yet so we're super excited to release it. It's slightly tart due to a lactobacillus kettle souring, and it's got some ripe fruit funk complexities from fermenting with our house Brett blend. We also dry hopped it with one of our favorite combinations, Amarillo and Simcoe hops, that left all sorts of fruit and spice flavors in the beer. It's a really cool beer that tastes great now and will also probably cellar well. Follow the journey with us, grab one for now and one for later to see how it evolves in the bottle. On shelves in November.

IN THE ILIAD, THE HOMERIC HYMNS, AND IN HESIOD'S THEOGONY, ATHENA IS GIVEN THE CURIOUS EPITHET TRITOGENEIA. THE MEANING OF THIS TERM IS UNCLEAR; IT COULD MEAN VARIOUS THINGS, INCLUDING "TRITON-BORN", PERHAPS INDICATING THAT THE SEA-DEITY WAS HER PARENT ACCORDING TO SOME EARLY MYTHS. IN OVID'S METAMORPHOSES ATHENA IS OCCASIONALLY REFERRED TO AS "TRITONIA". With a touch of coriander and sea salt, you can say this beer was Triton-born. We made a Gose and we're calling it Tritonia. This limited release offering was made with Cucumber and Lime and is available in kegs and serving at your favorite craft beer bars now.

Some folks say they don’t like hoppy beers, and to that we say that hops do not equal bitterness. To us, hops offer a plethora of flavors, not just bitterness; and in Tropicália it’s a beautiful, luscious, fruit journey for your palate to enjoy without fatigue.
