Bourbon Baby is a baby Scotch ale which we’ve gone on to age in bourbon barrels. The Scotch ale base is light bodied and low ABV, and brings toasted shortcake and blossom honey flavours; the barrel ageing adds a demonic, dark vanilla twist. Rich brown sugar, hints of smoke, spiced fruit, chocolate and raisins are just some of the multitude of flavours that have developed. Our aim was to showcase barrel ageing in a lower ABV beer and we felt the malty scotch ale base was the perfect way to do this. The body remains light, yet there is a complexity quite unlike anything you would normally expect in a Scotch ale.

The 12.5% Barley Wine fermented well, the champagne yeast drew it ever closer to 12.5%. The beer was brewed with a single hop variety and was going to be partially aged in oak casks.

How to Disappear Completely, Is my favourite Radiohead song. Now, it is also our most extreme beer to date. Weighing in at just 3.5% ABV but loaded with more hops per barrel than any other beer we have ever made. It is jam-packed with 2 of our favourite hops - Columbus and Centennial. It has 198 (yes one hundred and ninety eight) theoretical IBUs. It was mash-hopped and first wort hopped just for good measure. Oh and dry-hopped to hell too. Although balance was not our priority in designing this beer we spent allot of time getting the grain bill dialled in. We use allot of caramalt, some amber malt and some pale chocolate malt to give the little beer as much body and mouth feel as possible and the ability to handle all the hops we threw at it. A beer with a soul and a purpose. A statement of intent. A modern day rebellion for the craft beer proletariat in our struggle to over throw the faceless bourgeoisie oppression of corporate, soulless beer.? The Antarctic name inducing schizophrenia of this uber-imperial stout originates from the amount of time it spent exposed to extreme cold. This beer began life as a 10% imperial stout 18 months ago. The beer was aged for 8 months in an Isle of Arran whisky cask and 8 months in an Islay cask making it our first double cask aged beer. After an intense 16 month, the final stages took a ground breaking approach by storing the beer at -20 degrees for three weeks to get it to 32%. For the big chill the beer was put into containers and transported to the cold store of a local ice cream factory where it endured 21 days at penguin temperatures. Alcohol freezes at a lower temperature than water. As the beer got colder BrewDog Chief Engineer, Steven Sutherland decanted the beer periodically, only ice was left in the container, creating more intensity of flavours and a stronger concentration of alcohol for the next phase of freezing. The process was repeated until it reached 32%.

The irony of existentialism, the parody of being and the inherent contradictions of post-modernism, all so delicately conveyed by the blocky, pixelated arcade action have all been painstakingly recreated in this bottles contents. This imperial stout is brewed with copious amounts of speciality malts, jasmine and cranberries. After fermentation we then dry-hop this killer stout with a bucketload of our favourite hops before carefully ageing the beer on French toasted oak chips. It is all about moderation. Everything in moderation, including moderation itself. What logically follows is that you must, from time, have excess. This beer is for those times.
