Aged for 3 months in a Doc Porter's bourbon barrel, BBL Knockout 3 has the same basic aroma of dark fruits and flavor to match, but adds some booziness, lots of bourbon and wood character, and a distinct tartness and dry finish. Adding oxygen during transfer allowed sour cultures to take over and produce acidic compounds. It was a fun experiment and some tasty brews were had. Look for more in the future.
