Fìor is a brett saison aged in pinot noir barrels from the Willamette Valley. Expect tannic structure from the oak, the French saison yeast's classic black peppercorn finish, a little barnyard funk from the brettanomyces, and aromatic notes of pear, peach, and of course, pinot noir.
