This beer was brewed as a modern-day rendition of a true estate-style ale with all ingredients native or grown in Colorado and sourced 100% from local Colorado Companies. In addition, true to style, this beer has also been naturally carbonated.
Malts were locally grown, malted and kilned in Colorado, single sourced from Root Shoot Malting Company.
The hops are Neomexicanus, a hop which is indigenous to Colorado and has been growing in the area for 20-30,000 years. These hops were sourced and packaged by our friends at Billy Goat Hop Farms.
In addition to the hops, a native herb, Colorado Native Monarda (Bergamot), was used. This herb is found all over Colorado and was used by the indigenous peoples for medicinal purposes. Miss Lisa harvested this herb and used the 420 Extractor provided by Mystic Mountain Distillery to create a tincture. We used it as the bittering agent, and it provides orange and citrus notes.
The yeast is a native strain of Brettanomyces, found on Plum Trees. This yeast was harvested and cultivated for us by Propagate Labs, another Colorado Company. This particular strain is more mild than other strains and helps make this beer much more approachable and appealing, while still maintaining its traditional characteristics.
