Our head cider maker grew up in Vermont and couldn’t wait to add New England apples to those from NC to make an exceptional cider. Juice pressed from Dabinett, Ellis Bitter, Rhode Island Greening and Yarlington Mill apples grown in New Hampshire at Poverty Lane Orchards were used to back-sweeten our North Carolina Stayman cider. The New England apples are English Bittersweets: low acidity, high tannins and body let the sweet apples shine. This medium cider highlights fresh, fruity apple, notes of honeysuckle, pear and spice. Apple tannins provide medium body. Bright acidity and prickly carbonation dance on the tongue bringing a balance of sweet apple and tartness. This is truly where the North meets the South!
