This three-part collaboration between Flying Dog and Evolution Craft Brewing Company began with Genus One, a stock ale with caramel and brown fruit notes mingling with hints of roast, chocolate, and toast. Then, each brewery brewed a second batch of the beer, with Evolution aging Genus Two in bourbon barrels and Flying Dog dry-hopping Genus Three with Galaxy hops.
