This beer was fermented with a blend of a Belgian saison yeast, Lactobacillus, and two Brettanomyces yeast strains. After fermentation, a heavy dose of Southern Cross and Idaho 7 hops was added. The result is funky and sour, accented by strong citrus rind flavors and subtle tropical fruit aromas. This beer is intense and may require a few sips for palate adjustment. Cheers!
