Elephant Butte wild ale is our brewers' take on a dark Belgian ale. The malt bill provides a caramely, sweet malt flavor that provides the background for the incredibly unique flavors resulting from the wild yeast; plums, dark fruit, and a mineraly earthiness all build on each other. We also added another Belgian yeast, for a slightly fluffier, fuller body, and added complexity. Dry hopped with Bullion and Southern Cross hops.
