A spin-off of American Light Lagers, cream ales utilize adjuncts and ale yeast. We use flaked corn in addition to the quality malted barley we use in our other beers. This “ale” was fermented with our house ale yeast at a much cooler temperature than normal to give it a crisper, cleaner yeast profile more reminiscent of lagers. What you have in your hand is a crushable beer similar to what you might find at a ceremonial dinner. And we like that way.
