Dry, tart, and tannic. Wild fermented eating and heirloom apples, with a pronounced "attention grabbing" acidity and deep garnet color. This throwback to Kir has subtle red berry notes but is interplayed with complexity, a solid tannic backbone, and a decided dryness.
