Collaboration with Council Brewing, a portion of this beer was soured to produce a light kiss of acidity, followed by a generous dry hop of Mosaic, Hallertau Blanc, and Amarillo, resulting in aromas and flavors of overripe papaya, white grape, peach, and mandarin orange. Cool fermentation with an east coast yeast strain contributes stone fruit esters that compliment the acidity and hop notes.
