Our Ancient Wet Hop Ale is named after Shem, the son of Noah in biblical history. He was a brewer who utilized the grains that were available at the time. We brewed this beer with raw and malted barley, as well as the seven ancient grains: amaranth, kamut, buckwheat, spelt, quinoa, millet and teff. These ingredients impart a raw and natural grain flavor to the beer and because most of the ancient grains are naturally light in color and unmalted, this beer is pale in color. We hopped the beer with wet Centennial hops. These are hops that are used in the brewing process right after they are picked from the vine. These hops impart a natural green hop flavor to beer, as well as the usual flavors of citrus and pine that are normally associated with Centennials. The result is a pale ale with flavors of natural grains and fresh hops.
